Ingredients

• 4 lb. Cornish game hen or your choice of chicken
• 5 small-medium tomatoes
• 4 bell peppers (traditionally green)
• 1 1/2 medium onions
• 2 garlic cloves
• 1 teaspoon olive oil
• Optional: Serve over rice of choice

Directions

1. Chop tomatoes, peppers, onion, and garlic.
2. To a pan, heat olive oil and saute onions.
3. Add bell peppers and garlic and cover.
4. Add tomatoes and cover until it cooks down.
5. To another pan, heat olive oil and add Cornish game hen.
6. Cook Cornish game hen for about 30-40 minutes.
7. Add vegetable mixture to pan with the Cornish game hen.
8. Serve.
